1 Peter 5:7 is one of John's favorite Bible verses. He is better at forwarding than I and he sometimes reminds me to put on the shield of faith.

Oven-Crisped Potato Skins
PRINT RECIPE
6 medium russet potatoes, scrubbed clean
vegetable oil for baking pan
canola oil for potatoes
1/2 lb. bacon
1/2 cup sour cream
salt and pepper
4-oz cheddar cheese, grated
green onions
Position rack in center of oven and heat to 400 degrees. (I used my toaster oven). Pierce each potato several times; place on rack and bake until tender, about 45 minutes. Let stand until cool enough to handle, about 20 minutes.
While potatoes are baking, cook bacon until crisp. Drain, cool and crumble.
Cut cooled potatoes in half, lengthwise. Scoop out insides, leaving 1/4 -inch thick shell, reserving insides of potato for another day.
Lightly brush both outside and inside of the potatoes with canola oil. Place on a heavy baking sheet that has been lightly coated with vegetable oil.
Position oven rack in top third of oven and heat to 425 degrees. Lightly brush potato skins inside and out with canola oil. Season with salt and pepper. Transfer to heavy baking sheet. Bake 12-15 minutes; turn over and bake 12 minutes more.
Sprinkle hot skins with shredded cheese and top with a dollop of sour cream; sprinkle with bacon and garnish with chives.
As for the scooped-out potato centers... a little butter, sour cream, heated milk, salt and pepper then mashed with a hand-masher for delicious chunky mashed potatoes for tomorrow!

We were finally able to take Silas out to celebrate his 6th birthday that was back in May.We went to a Camden Riversharks Baseball game at Campbell's Field at the base of the Benjamin Franklin Bridge. Here at The Camden Waterfront just across the river from Philadelphia, Silas clenches his Finley. A ride on the carousel and a hug from Skeeter Though he doesn't look it, Jared had a great time too.Sweet guy was at a sleepover the night before and hadn't slept for over thirty hours but was still cheerful and kind. He dozed in the car then came alert a bit after this :)
We had had seats right in the center just behind the dugout but when the sun came out from behind the clouds it got pretty hot. We moved to higher, shadier seats with an occasional breeze that was better.View of the Ben Franklin Bridge heading into Philly After the game there was a firework display

Coconut Banana Bread with Glazesource Cooking Light
PRINT RECIPE2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe banana (about 3 large bananas)
1/4 cup plain low-fat yogurt
3 tablespoons dark rum (substitute apple juice or omit)
1/2 teaspoon vanilla extract
1/2 cup flaked sweetened coconut
Cooking spray
1 tablespoon flaked sweetened coconut
1/2 cup powdered sugar
1 1/2 tablespoons fresh lime or lemon juice (I like to use orange juice)
Preheat oven to 350°.
Lightly spoon the flour into dry measuring cups, and level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk to combine.
Place granulated sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, rum, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Stir in 1/2 cup coconut.
Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle with 1 tablespoon coconut.
Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan.
Combine powdered sugar and juice, stirring with a whisk; drizzle over warm bread. Cool bread completely on wire rack.
Cambrie spent the day with me and we baked Coconut Banana Bread together.She stirred and whisked and mashed and licked and ate coconut right from the bag!then I polished her fingernails and toenailsthen she ate three bananasthen she was a wee bit impishthen she melted my heart with those soft brown eyesthen I had to give her a hugand kiss those soft cheeks!
Not only does Mom-Mom and Pop-Pop like this bread, I am assuming Cammie likes it a lot too, since she ate two slices, stuffing her mouth way too full with each bite.
The best-est days are those spent with a two-year-old!
