Gina Neely's Collard Greens

This is the only collard recipe you will ever need. It's that good - smack your grandma good.
The Wife and I recently started a supper club with three other couples, and we volunteered to host the inaugural gathering. We selected the theme "Fall in the South." On the menu was crisp roast pork, pimiento potatoes gratin (recipes to come) and these collards from Gina Neely. The collards were a hit. People who didn't like collards raved about these, and they were called "the best I've ever had" from an expert North Carolinian.
They were the perfect balance between sweet, savory with some heat from the red pepper flakes. These are hands down the best collards I've ever tasted.
Gina Neely's Collard Greens
5 bunches of collards
4 cups of salted water
4 large smoked ham hocks or shanks
1 cup sugar
salt
1 teaspoon red paper flakes (or more depending on how hot you like it)
Wash the collards, remove the stems and cut into one inch strips.
In a large stock pot bring 4 cups of salted water to a simmer and drop in the ham hocks. Cover and let simmer for about 90 minutes.
Remove the ham hocks and set aside until they're cool enough to handle, then shred the pork off the bone.
Add the collards to the pot - yes it will be A LOT, but they cook down pretty quickly.
Using tongs, turn them every minute or so. Let them cook down until there is enough room to add the remaining ingredients.
Add the meat from the ham hocks, sugar and pepper flakes, and give them a few turns with the tongs to combine.
Let the collards simmer away for another 90 minutes or so, and you'll be rewarded with one of the best southern sides you've every had.

Let me start by saying that The Baby is a total carb queen. When she won't eat her vegetables, chicken nuggets, etc., she'll always take a bite of bread, muffins, donut holes or cake. That being the case, The Wife and I always try to keep some kind of baked goods around the kitchen, be it The Wife's pumpkin muffins, biscuits or a cake. So when I saw this recipe in an email from Food and Wine, I made a mental note to make it next time we were in need.
This is a simple recipe to throw together at the last minute. It comes together quickly, and is dense, buttery and sweet.
Jacques Pepin's Pound Cake
2 1/2 sticks unsalted butter
1 teaspoon Vanilla extract
1/4 teaspoon salt
1 1/4 cups sugar
1/4 cup milk - at room temperature
2 1/2 cups flour
In a stand mixer, combine the butter, vanilla, salt and sugar. Beat until light and fluffy, about 3 minutes. Beat in the milk. Beat in the eggs, two at a time. Sift the flour over the batter, and whisk until smooth.
Scrape the batter into a bundt pan, and smooth the surface.
Bake the cake for 1 1/2 hours - or until the top is cracked and brown, and a toothpick inserted comes out clean.
Remove from the oven, and let the cake rest for 10 minutes before turning on a wire rack to cool.
Enjoy!

The bananas in this cake makes it much healthier than other cakes right? I jest, but everything in moderation, I say. For my husband's brother in law's birthday dinner last weekend, I made this banana cake with peanut butter filling and cream cheese frosting.
I tested out a new banana cake recipe, which I included below, but I'm not 100% happy with it. The banana taste was too subtle and I wish the cake wasn't as dense. Given all the positive reviews, I might go back to this recipe but substituting cake flour and adding sour cream.
Also, I used melted chocolate to pipe "Happy Birthday" and I realized how much I liked the flow of the chocolate versus frosting. Will definitely use this method again.
Banana Cakeadapted from Allrecipes.comMakes 1 8 inch cake
3/4 cup butter2 1/8 cups white sugar3 eggs2 teaspoons vanilla extract3 cups all purpose flour1 1/2 teaspoons baking soda1/4 teaspoon salt1 1/2 cups buttermilk1 1/2 cups mashed bananas
Preheat oven to 350F. Grease and flour 3 8 inch baking pans.
In a medium bowl, mix flour, baking soda, and salt together. Set aside.
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time. Add the vanilla. Stir in the flour mixture alternating with the buttermilk. Stir in the bananas. Pour the batter evenly among the pans.
Bake in the oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few crumbs stuck to it.
Remove from oven and let cool in the pan on a wire rack. Remove from pan and continue to let cool completely on the rack.

Happy Valentine's Day! At work, we decided to exchange Valentine's; something I haven't done since middle school. It was such a fun idea as there were plenty of cards (store bought and home made), candies, and treats.
What I shared with my coworkers were my favorite brownies which I added 1/2 cup of nutella. However, the taste of nutella wasn't as prominent as I wanted it to be. It did give the brownie a new richness which I liked.

Jill was telling me how recently she used a saying with her children that she remembered her dad saying to her as a child as she and her sisters prepared for bedtime. She knew he learned it from his mom and wondered where it came from. John would tell the girls, "Time for Kitty White's Party".Curious, we both did an internet search and came up with nothing.I was telling Abbey our quandary concerning the origin of Kitty White's party. Abbey searched and found that it was “LILY” White’s Party (some said Lily White’s Ball). Somehow, Lily became Kitty, at least in John's memory. We found several comments that people remember it from their childhood. Some said it was popular in the 40’s and 50’s. Most thought it annoying as children but now think of it fondly. It must had come from the following poem.

My beloved had a birthday in January.Wanting to celebrate, get together with family and a few friends and looking for a time of laughter and fun, I decided to throw a party.A party with a Mustache theme.
Even with a week of fighting a cold and sinus infection with nasty headache plus a snow storm the morning of the party, we were all able to gather for a good time.
After all the planning and preparation, I had a small twang of worry that the evening might be considered silly and dumb.But, as you can see in the photos, everyone got into it and it was a blast!John and baby Chloe ~ who was a tad uncertain of her PopPop's fake whiskers.
~the invitation~As guests arrived, they were able to choose and apply a mustache from the "Grooming Station" in the foyer. I followed a Martha Stewart video to make the various mustaches from fake fur and used fake eyelash adhesive to attach them directly above the upper lip.In the living room, a photo booth was set up to capture those dashing faces.I used thumbtacks to drape a sheet for the background and supplied a large white frame and smaller gold frame as well as props on-a-stick (link to patterns).The Photo Booth Sign is from Pinterest.I had my camera on a tripod that made picture-taking a little easier. Jill (far right) totally surprised us by coming down Thursday night from New York with her youngest daughter, Shaela, which made us all very happy!John with Jamie and JillFollowing patterns found here, I made photo props for the photo booth. My adorable niece and nephew-in-law found their favorite props.Dear cousins Karen and John, Toni and her mom, my sister totally got into the silliness of the party. Carol, me and Karen.Carol couldn't stop giggling all evening sporting her well groomed stashe. Jamie and JillThe little ones played mostly upstairs but they just couldn't resist joining in while donning their penciled-on staches.This sweet couple are our next-door neighbors for the past 28 years. More longtime friends and John's brother (in red flannel)There were a couple others, but I didn't have permission to share photos of them wearing their mustaches ;)I made a guessing game of famous mustache-sporting celebrities and included our mustache-wearing guests in the game as well. One (unmentioned) guest didn't even recognize his own mustache ;)~*~The game that I thought would get the least participation was actually the one that almost everyone played. How about some wiggling, twisting, jumping and shaking with a box of ping pong balls on your rump?!?Junk in the Trunk(instructional video) was very exciting... and the blur you see in the photos...that's what it took to get those little ping pong balls out and win the game(even though I shaved 1/4" off the opening of the box).We played with groups of four and there was some real competition happening when I mentioned prizes!
Happy Birthday chorus to Our Guy! The party picks were inspired by this talented lady. I found the derby graphic from Graphics Fairy. I made a Pin-the-Mustache-on-JOHN game by editing a photo in Photoshop and cutting paper mustaches and applying a dab of Scotch double sided adhesive roller. To make it large enough, I printed the top half and then the bottom half and taped them together onto black card stock.We ran out of time at the party for this but the kids thought it was great fun and I think the adults would had as well. I made a bunting using this template, but instead of gluing, I sewed it with right sides together and bias tape to attach them into two lengths.
