 Our baby celebrated her 21st birthday with a little help from some of her nieces and nephews.Flowers from my garden decorated a yellow cake with her favorite Fluffy Chocolate FrostingRaider creatively arranged the pillow for his snooze on the sofa. In the spring we contacted our township about a tree at the curb that was in decline.  They arrived today to remove it. The township planted trees in our neighborhood many years ago and sadly some of them are now in need of removal. I saw what is probably one of the last hummers of the season at the feeder.And something that makes me very happy...I got my new-to-me car in the garage!The past few weeks I have been working diligently downsizing and disposing of things we don't need.I have gone through every closet, nook and cranny.It feels much better already and reminds me of a song from a while back that I loved by Sara Groves and Joel Hanson called Traveling Light.

Pasta Shells with Cheese Filling

Have you used up all of your delicious Thanksgiving dinner left-overs?How about an easy and yummy dish with tender pasta shells and a creamy, cheesy filling for a lovely meal. Add a side salad, bread and maybe even a glass of wine on a candle-lit table for an extra special dinner.
JUMBO SHELLS WITH CHEESE FILLINGsource: Ronzoni box 
PRINT RECIPE
Ingredients:
1 pkg. (12 oz.) RONZONI JUMBO SHELLS, uncooked
4 cups (2 lb.) ricotta cheese
2 cups (8 oz.) shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 eggs
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
3 cups (about 28-oz. jar) spaghetti sauce or homemade sauce

Heat oven to 375°F. Cook pasta according to package directions; drain. Meanwhile, in medium bowl, stir together cheeses, eggs, parsley, salt, pepper and nutmeg. In 13 x 9 x 2-inch baking dish, spread 1/2 cup spaghetti sauce. Fill each cooked shell with about 1-1/2 level tablespoons cheese mixture; layer one-half filled shells in prepared dish. Spread one-half remaining sauce over shells; layer remaining filled shells over sauce. Spread remaining sauce over shells; sprinkle with additional Parmesan cheese, if desired. Cover with foil; bake 35 minutes or until hot and bubbly (doubling recipe or more may require increased baking time). 8 to 10 servings.
For ease in filling each shell, I use a decorator with a large opening tip.An added bonus... they freeze really well!Assemble in a foil pan, cover tightly with plastic wrap and then foil and freeze.  When ready to serve, thaw and bake as above. {remember to remove the plastic wrap before baking}

I recently picked up a FoodSaver at a garage sale. I had never used one before.  After making a batch of stuffed shells, I placed them (without sauce) onto a waxed-paper lined pan and set them in the freezer.  When frozen, I then sealed them using the FoodSaver.  The vacuum did crush them a little but they baked up just fine.
So, for the work of one recipe, I got several meals for John and I.

Friday afternoon I picked up our oldest granddaughter, Keri then her sweet friend, Annika, for a weekend full of fun activities.  These adorable little girls were a delight and had my heart smiling continually as I listened and watched their interaction.Anni is the granddaughter of my very dear friend of 28 years.Our kids grew up together and are close friends.Now, the children of our kids are growing up together and forming sweet friendships.After getting PopPop and Jared, our first stop was McDonald's for dinner and giggles. Even at 9-years old, the girls still had fun climbing and sliding in the Playland gym.Next it was to our local high school to see a delightful production of Annie followed by ice-cream sundaes with all the toppings at home.It was a late night, but Keri and Anni were up early and helped me make a pancake and sausage breakfast with tea in their own birthday-month tea cups. (The girls are 20 days apart in age) Heaven knows why the kids are all fascinated about our crawl space.  They couldn't resist helping PopPop bring up boxes and boxes of Christmas decorations. Then it was outside to gather leaves... again.  Our yard did not look like we already spent days raking/blowing/hauling leaves to the front curb, so Jared, Keri and Anni helped PopPop gather more for the leaf collection trucks coming this week.It didn't take much coaxing from Keri and Anni for me to get out my childhood Barbie dolls. The girls played for a couple of hours on my bed enjoying the same dolls I played with at their age.There were also pots of tea with cream and sugar cubes, art work created, Mad Libs to chuckle over and hours of chatter. More Ice-cream, the Muppet's Christmas Carol movie and finally bedtime.Our church has two campus's and this morning we will attend church at their campus and then enjoy a fellowship lunch together after service.I haven't done one ounce of decorating yet but I sure did enjoy every moment with these two cuties.

Our granddaughters, Keri, Brenna and Shaela love their American Girl dolls.I crocheted these cute retro vests and hats as Christmas gifts for them following a free pattern from Red Heart. The above vest and hat were made using the recommended RED HEART® “Soft Yarn.The other two sets were made using yarn I had in my stash and resulted in a slightly larger garment but still fitting nicely. I used a "G" hook for all crocheting.

and it is just the right lime greenwhat I envisioned it would be sometimesin certain lighting during the day with natural lighting the color is beautifulbut in the evening with the lights on...well, not as lovelyI'll be able to live with it for a while and will enjoy the fun change.But just not sure where I will go next with the wall color~*~
The paint color I finally settled on is called Fresh Pear
Just on one wall.  The other walls are painted white.

Alton Brown tweeted to today what he would like for his birthday this year...

His tweet got me thinking about how to help even more. Remember the little fundraiser we did for Monterey Bay and Heifer International? I was happy to report of the $300 we raised. So I thought, why not try to help out this cause for AB's birthday here too.

I've been wondering what to do with this site in light of the new developments with Alton and his social media forray. In my current poll a lot of you have said you enjoy the news and reports of his events. So, if you have ever enjoyed anything on this site or got anything, please donate. It will be great to have the wonderful readers and Alton's fans banning together to bring in another good amount of money for another worthy cause. This would mean a great deal to me as well as AB.

So here's what I want to do.

Donate what you can, but remember PayPal takes a percentage 2.9% + $0.30 USD here's a chart to figure in the fees if you would like to include that.

Then I will send the whole pot to Samaritans Purse from all of AB's fans for his birthday.

As of June 13, the birthday fund raiser is complete.
We ended with $100 to donate to the organization for Alton's birthday.  I have contacted them and am waiting to find the best method to send the money

Alton Brown and Tennessee Aquarium's Serve and Protect Project

Alton Brown will help the Tennessee Aquarium with their new sustainable seafood endeavor later this fall. The "Serve and Protect" project will raise awareness and promote local and sustainable seafood choices.
